

PUSAKA RASA NUSANTARA
Indonesian cuisine is a melting pot of the archipelago’s cultures combined with foreign influences, reflecting the nation’s long history, geography and diversity. With a diverse range of flavors, spices and unique ingredients, Indonesia’s culinary treasures are a reflection of the country’s cultural richness.
Unfortunately, the lack of culinary literacy has threatened the transfer of knowledge. Without written records, the younger generation risks losing valuable culinary heritage if the enculturation process fails.
This inspired the NUSA Gastronomi Indonesia Foundation to conduct in-depth documentation to record traditional recipes and the cultural stories behind them. This 4 series book of PUSAKA RASA NUSANTARA, is the result of two years of research traveling around Indonesia to cook with indigenous people of Indonesia.
This research was supported by the Ambassador Fund for Cultural Preservation (AFCP) of the US Embassy Jakarta.
